Grocery List & Meals | Week of May 5th
Even as a dietitian, meal planning can feel challenging and time-consuming. I try to keep it simple by planning a few meals ahead and giving myself flexibility during the week. I usually plan 2–3 dinners each week and the rest of the time we eat leftovers or grab something out. If we run out of meals before I make it to the store, I always keep rice, frozen veggies, and some kind of meat in the freezer to throw together something quick. This approach has helped me avoid overbuying and wasting food. Here’s how I used this week’s groceries:
Breakfast Options:
English Muffin with Cottage Cheese & Avocado
I’ve been toasting a whole-wheat english muffin and layering on cottage cheese with mashed avocado, and Everything But The Bagel Seasoning. I’ll usually have some raspberries or blueberries on the side.
Greek Yogurt Bowl
Just Greek yogurt with fresh berries and some granola or peanut butter. If I want to up the protein, I’ll throw in a scoop of protein powder. I rotated between this and the English muffin depending on what I felt like that day.
Lunch Options:
I usually keep lunch simple and have leftovers from dinner or I’ll just make whichever breakfast I didn’t already have that day.
Dinner Options:
Chicken Piccata with Roasted Potatoes & Asparagus
I like to mix in a few new recipes a month and this one’s been on my list. My mom used to make chicken piccata when I was growing up, so I was excited to try my own version of it. I linked the full recipe here if you want to try it too.Burgers with Sweet Potato Fries
I seasoned the ground beef with burger seasoning and formed it into patties, then cooked them on a pan. I used burger buns, a slice of tomato, and some cheese. For a side, I threw some frozen sweet potato fries into the air fryer for about 15 minutes.

Blueberry Muffins
I’m using a blueberry muffin mix and adding in fresh blueberries. I’m not great at baking, but I always crave something sweet mid-day or after dinner, so I like having something easy like this on hand.
