Grocery List & Meals | Week of May 5th

Even as a dietitian, meal planning can feel challenging and time-consuming. I try to keep it simple by planning a few meals ahead and giving myself flexibility during the week. I usually plan 2–3 dinners each week and the rest of the time we eat leftovers or grab something out. If we run out of meals before I make it to the store, I always keep rice, frozen veggies, and some kind of meat in the freezer to throw together something quick. This approach has helped me avoid overbuying and wasting food. Here’s how I used this week’s groceries:

Breakfast Options:

  • English Muffin with Cottage Cheese & Avocado
    I’ve been toasting a whole-wheat english muffin and layering on cottage cheese with mashed avocado, and Everything But The Bagel Seasoning. I’ll usually have some raspberries or blueberries on the side.

  • Greek Yogurt Bowl
    Just Greek yogurt with fresh berries and some granola or peanut butter.
    If I want to up the protein, I’ll throw in a scoop of protein powder. I rotated between this and the English muffin depending on what I felt like that day.

Lunch Options:

  • I usually keep lunch simple and have leftovers from dinner or I’ll just make whichever breakfast I didn’t already have that day.

Dinner Options:

  • Chicken Piccata with Roasted Potatoes & Asparagus
    I like to mix in a few new recipes a month and this one’s been on my list. My mom used to make chicken piccata when I was growing up, so I was excited to try my own version of it. I linked the full recipe here if you want to try it too.

  • Burgers with Sweet Potato Fries
    I seasoned the ground beef with burger seasoning and formed it into patties, then cooked them on a pan. I used burger buns, a slice of tomato, and some cheese. For a side, I threw some frozen sweet potato fries into the air fryer for about 15 minutes.

Something Sweet:

  • Blueberry Muffins
    I’m using a blueberry muffin mix and adding in fresh blueberries.
    I’m not great at baking, but I always crave something sweet mid-day or after dinner, so I like having something easy like this on hand.
